Watermelon Salad with Creamy Mint Dressing
PREP TIME: 10-15 minutes
SERVES: 4
INGREDIENTS
1/4 avocado, cored and peeled
1/2 lime, juiced
1/4 cup water
4 teaspoons red wine vinegar
1 tablespoon chopped fresh mint
Sea salt and black pepper, to taste
8 cups chopped romaine lettuce
4 cups chopped watermelon
1/4 cup crumbled goat cheese or feta cheese
1/4 cup toasted pine nuts
DIRECTIONS

To make the dressing, blend together the avocado, lime juice, water, vinegar, mint, salt, and pepper until smooth.

To assemble the salad, toss dressing with lettuce until coated, then mis in remaining ingredients.
