Strawberry Rhubarb Crumble

Rhubarb is a vegetable I got to know pretty well since it was a regular organic delivery box item during my days spend in London. Rhubarb is super low in calories (one stalks contains only 11 calories) and is filled with fiber!  In fact, rhubarb is one of the best sources of fiber per calorie. Fiber is crucial for proper digestion, elimination of toxins, and curbing your cravings.

Strawberry Rhubarb Crumble
SERVES: 8
PREP TIME: 15 minutes
COOK TIME: 45 minutes
INGREDIENTS
2.5 cups chopped rhubarb
2 cups chopped strawberries
1 orange, juiced and zested
4 tablespoons sugar
1/2 cup rolled oats
4 tablespoons chopped almonds
4 tablespoons flour
Dash of sea salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground ginger
5 tablespoons 100% maple syrup
DIRECTIONS

Preheat oven to 375 degrees F.

In a large bowl, mix rhubarb, strawberries, orange juice, orange zest, and sugar until well combined.  Spread evenly in a pie pan or 8 x 8 baking dish.

In another bowl, mix together oats, almonds, four, sea salt, cinnamon, and ginger. Add maple syrup and stir until evenly mixed.

In pie pan or small baking dish, top fruit evenly with crumble mixture and cover with foil or baking top.  Bake for 25 minutes, uncover, and cook an additional 20 minutes.  Let cool for 10-15 minutes before serving.
