This three-ingredient egg bake is a staple in our household. I make it at least once a week due to its ease—plus, everyone loves it!
For a weeknight dinner, I often pair it with roasted potatoes and a kale salad. This also makes a great light lunch when you add a simple green salad.
Preheat the over to 400ºF and grease a 9-in baking dish (I use a 9-in pie pan).
In a large bowl, beat eggs and combine with remaining ingredients. Pour into prepared pan and bake for approx. 30-40 minutes.
Recipe note: You can easily swap out broccoli for any other veggie, like bell peppers, zucchini or mushrooms.
