Summer Rolls with Peanut Sauce
SERVES: 4 (Serving Size: 2 rolls and about 2 tablespoons dipping sauce)
INGREDIENTS
Summer Rolls:
2 cups spinach or lettuce
1 cup broccoli slaw
1/2 cup cilantro (chop if desired, or leave whole to save time)
8 (8-inch) round sheets rice paper

Peanut Sauce:
4 tablespoons unsalted creamy peanut butter
2 tablespoons water
1 tablespoon reduced sodium tamari or soy sauce
1 lime, juiced
Dash of cayenne pepper (optional)

For the Summer Rolls: Take a rice sheet and dip it in warm water. Lay on a clean surface and place 1/4 cup lettuce, 2 tablespoons broccoli slaw and 1 tablespoon cilantro in the center of the sheet.

Fold the rice paper sides over the filling and roll the summer roll as if you were making a burrito.

Repeat with the rest of the rice sheets and mixture.

For the peanut sauce: Whisk together peanut butter, water, tamari, lime juice and cayenne pepper (if desired). You may need to use a little more or less water depending on desired consistency.
