No Bake Almond Butter Balls

This recipe is from one of my good friends and fellow dietitians, Amanda Burleson. She made these at a recent get-together and all the kids there, including my 15-month old daughter, devoured them. I decided to make them at home since it’s hard to find healthy, convenient snacks for the little ones (trust me when I say that even dietitians struggle with this).

These almond butter balls have been such a hit in my household that I now make a batch every week. I hope you enjoy them as much as we do! 

No Bake Almond Butter Balls
SERVES: 20-25
INGREDIENTS
5 dates, soaked overnight in water
4-5 tablespoons almond butter (or any type of nut butter or peanut butter)
5 tablespoons hemp seeds (or any type of seed, such as chia or flax)
2-3 cups ground oats (You can grind raw rolled oats in a food processor)
DIRECTIONS

In a food processor, puree soaked dates with 1 tablespoon of date water until smooth.

Add date paste to a large bowl and mix with almond butter and hemp seeds. Slowly add in the ground oats until you get desired consistency—not too sticky, but not too dry.

Roll dough into ping-pong size balls. That’s it!
